Bacon Toffee Bit Cookies
Today we are talking bacon toffee bit cookies! Have you ever smothered bacon with hot maple syrup? Then you know that bacon goes with pretty much anything! We tried chocolate cupcakes, maple buttercream and chocolate dipped bacon —> Get the recipe! ( link coming soon!)
Searching Pinterest I found delicious recipes for bacon toffee, bacon brownies, bacon donuts, bacon truffles, even a bacon cannoli! I figured bacon has to good in a cookie, right? At first my kids thought I was crazy; husband too. I decided to save 4 strips of crunchy bacon from breakfast and make some bacon toffee bit cookies. They turned out fabulous! Salty, sweet and chewy.
- 2 ¼ cups unbleached flour
- 1 teaspoon baking soda
- 1 cup salted butter, softened
- ½ cup white sugar
- ¾ cup brown sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 bag toffee bits (found in baking aisle with chocolate chips)
- Finely chopped crispy bacon
Preheat oven to 350 ℉. Grease a cookie pan and set aside.
In a large bowl, beat butter, white sugar, brown sugar, vanilla and egg together until creamy. Add 1 teaspoon of baking soda and mix. Mix in the flour in 1-2 additions until completely combined.
Fold in the toffee bits and crispy bacon pieces. Using a tablespoon, scoop cookies from batter and place on the greased cookie sheet. Bake 8-10 minutes depending on your oven.
