Mint Blossom Easter Cookies are an easy and delicious dessert. These cookies are generously rolled in sugar, baked to perfection and topped with a minty kiss! Baking “can be” a great way to spend time with your kiddos over Spring break. Mint Blossom Easter Cookies are a simple recipe for kids to help with.
I say “can be” because as we all know nothing is ever like in the movies. It is always messy and if you have more than one kid, there is sure to be fighting over who measures, mixes and rolls. HOWEVER, I find that when I let go, just a little and give each one of my kids a role (I have 3), sometimes it works out and we actually have fun!
Mint Blossom Easter Cookies
- 1 cup sugar
- ¾ cups salted butter, softened
- 1 egg
- 1 ½ teaspoon vanilla
- 2 ¼ cup unbleached flour
- 1 teaspoon baking powder
- Pinch of salt (optional)
- Pastel Mint Candies (found in bulk at grocery store)
Preheat oven to 375 ℉. Grease a baking sheet and set aside.
Combine butter, sugar, egg and blend together until you get a creamy texture. Add vanilla extract and baking powder. Fold in flour and mix until dough forms.
Roll dough into 1” balls and coat in sugar. Put on baking sheet and chill dough balls for 10 minutes.
Remove from fridge and bake for 8 minutes. Remove cookies from oven and press one mint into each cookie while they are still hot.
